Ingredients
- 2 unpeeled beets, tops and bottoms removed
- 2 large carrots, peeled
- 3 whole unpeeled russet potatoes
- ½ yellow onion, chopped
- 1 (12 ounce) jar herring fillets, packed in oil
- 6 tablespoons mayonnaise
- salt and ground black pepper, to taste
Steps
- Bring a large pot of water to a boil. Add beets, carrots, and potatoes, cooking until crisp-tender, following these approximate doneness times: 40 minutes for beets, 25 to 30 minutes for carrots, 15 to 20 minutes for potatoes, removing from water as they become done.
- Cool slightly. Remove and discard skins from beets and potatoes. Grate beets, carrots, and potatoes, keeping them separate.
- Arrange 1/2 of the onions and 1/2 of the herring in a layer in a large bowl. Arrange 1/2 of the potatoes, 1/2 of the carrots, and 1/2 of the beets on top of onions and herring. Spread 3 tablespoons of mayonnaise over salad. Season with salt and pepper. Repeat layers to finish building salad.
- Cover with plastic wrap and chill in the refrigerator at least 1 hour. Serve cold.
